First you boil up the sauce...then add the shrooms to cook a bit, then you remove them, reduce the sauce and throw together and serve. Healthy too, can't beat that. Brenda * Exported from MasterCook * Mixed Mushroom Ragu Recipe By :Good For Your Heart Cookbook, Helen Middleton Serving Size : 4 Preparation Time :0:00 Categories : Mushrooms Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 small onion -- finely chopped 1 clove garlic -- crushed 1 teaspoon coriander seed -- crushed 2 tablespoons red wine vinegar 1 tablespoon soy sauce 1 tablespoon dry sherry 2 teaspoons tomato paste 2 teaspoons light brown sugar 2/3 cup vegetable stock 4 ounces baby button mushrooms 4 ounces cremini mushrooms -- quartered 4 ounces oyster mushrooms -- sliced salt -- to taste freshly ground pepper -- to taste 1 sprig fresh cilantro -- for garnish Put the first nine ingredients into a large saucepan. Bring to a boil and reduce the heat. Cover and simmer for 5 minutes. Uncover the saucepan and simmer for 5 more minutes, or until the liquid has reduced by half. Add the baby button and cremini mushrooms and simmer for 3 minutes. Stir in the oyster mushrooms and cook for a further 2 minutes. Remove the mushrooms with a slotted spoon and transfer them to a serving dish. Boil the juices for about 5 minutes, or until reduced to about 5 tbsp. Season well with salt and pepper. Allow to cool for 2-3 minutes, then pour over the mushrooms. Serve hot or well chilled, garnished with fresh cilantro.
