In a small saucepan, bring about 1 1/2 cups of veggie stock to the boil. Add the vegetables first if they are a longer cooking variety, then add the noodles plus curry powder for the last 2 minutes. Then add the tofu, plus any extra soy sauce in the bowl. Stir until heated through. This makes one very lage meal, or two soup servings before a main meal. It is excellent if you are in a hurry, and don't want to buy junk food!!
