Easy Noodle Soup

Amount Measure Ingredient -- Preparation Method

chinese noodles

veggie stock

1 teaspoon curry powder

1/2 cup frozen vegetables

1/2 block tofu -- cubed

soy sauce

 

Place the cubed tofu in a bowl and sprinkle with soy sauce to taste. In

a small saucepan, bring about 1 1/2 cups of veggie stock to the boil.

Add the vegetables first if they are a longer cooking variety, then add

the noodles plus curry powder for the last 2 minutes. Then add the tofu,

plus any extra soy sauce in the bowl. Stir until heated through. This

makes one very lage meal, or two soup servings before a main meal. It is

excellent if you are in a hurry, and don't want to buy junk food!!

 

Serves: 1-2

Preparation time: 15 minutes
