Cavatelli With Spicy Veggie Sausage And Tomatoes

2 tablespoons olive oil

1 carrot -- finely chopped

1 onion -- finely chopped

1 clove garlic -- minced

2 tablespoons tomato paste

1 tablespoon minced fresh marjoram

OR 1 teaspoon dried marjoram

1 teaspoon ground fennel seed

29 ounces canned Italian plum tomatoes -- chopped

1/2 teaspoon salt

1/8 teaspoon freshly ground pepper

1/8 teaspoon cayenne pepper -- or to taste

8 ounces cooked vegetarian sausage -- crumbled

hot red pepper flakes

1 pound frozen cavatelli

freshly shaved Parmesan

OR grated soy Parmesan cheese

minced fresh flat-leaf parsley

 

Serves 4

 

There are a variety of vegetarian sausages on the market, however, most are

not very spicy and need a little encouragement from your spice

cupboard. If veggie sausage is unavailable, use ground veggie burgers or

another ground meat alternative and increase the spices to give it a

" sausage " flavor.

 

In a large saucepan, heat 1 tablespoon of the oil over medium heat. Add

the carrot, onion, and garlic, and cook until soft, about 5 to 7

minutes. Stir in the tomato paste, marjoram, ground fennel, and the

tomatoes. Season with the salt, pepper, and cayenne, and simmer about 20

minutes. Stir in the sausage and red pepper flakes to taste, and simmer 5

minutes longer to blend the flavors. Keep warm over low heat. Cook the

cavatelli in a large pot of salted boiling water, stirring occasionally,

until it is tender but still chewy, about 8 minutes. When the pasta is

cooked, drain it and divide among individual plates or shallow bowls. Top

with the sauce, a few shavings of Parmesan, and a sprinkling of

parsley. Serve immediately, passing additional cheese at the table.
