Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

2 tablespoons unsweetened cocoa powder

1 tablespoon cornstarch

1 cup skim milk

1 can sweetened condensed skim milk

1 cup cooked white or brown rice

1 ounce semisweet chocolate -- chopped

1 teaspoon vanilla extract

A silken smooth, very rich chocolate pudding with the added pebbled texture of

rice. You'd never guess that this indulgent dessert has 3 grams of fat per

serving. Garnish with fresh raspberries for an especially pretty presentation.

Combine the cocoa and cornstarch in a heavy-bottomed, medium saucepan. Add 1/4

cup of the skim milk and whisk until smooth. Whisk in the remaining skim milk

and the condensed milk and continue whisking until well blended. Stir in the

rice. Bring to a boil over medium heat, stirring frequently to prevent

scorching. Remove from the heat and stir in the chocolate. Return to medium heat

and boil for 2 minutes, stirring constantly. Remove from the heat and stir in

the vanilla. Spoon into 4 dessert cups or a serving bowl. Cover with plastic

wrap so that the wrap touches the surface of the pudding and prevents a skin

from forming. Refrigerate until chilled.
