Chocolate Chip-Banana Oat Cake

1 1/3 cups rolled oats -- (not instant)

1 1/2 cups unbleached all-purpose flour

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon salt

4 tablespoons butter -- at room temperature

3/4 cup sugar

3 very ripe bananas

2 large egg whites

1/2 cup nonfat vanilla yogurt

1 1/2 cups chocolate chips

 

Preheat the oven to 350 degrees. Spray an 8-inch square baking dish with

nonstick cooking spray.

 

Process the oats in a blender until the oats are reduced to a coarse powder;

allow some large flakes to remain. Combine this oat flour in a medium bowl with

the all-purpose flour, baking powder, baking soda, and salt. Mix well.

 

In a large bowl, beat together the butter and sugar. Add the bananas, egg

whites, and yogurt, and beat until smooth. Add the oat mixture and beat until

smooth. Stir in the chocolate chips. Spoon the batter into the prepared baking

dish. Bake for about 1 hour, until a knife inserted near the center comes out

clean. Cool on a rack.
