Guest guest Posted March 28, 2002 Report Share Posted March 28, 2002 What I've heard/experienced Thin asparagus does not need peeling.. thick asparagus does better when peeled, from the part that gets thicker than a pencil. I cook asparagus a heretical way, but it works for me. I snap the stems of the asparagus.. I usually get thin ones, so I don't peel. I then put them with about 1/2 inch of water in the stove, turn it on high, stir them when the water begins to boil and take out just after when they turn color, about 2 minute after the water boils. If I'm serving them cold, I'd plunge in an ice water bath... I let them cook about 30 seconds - 1 minute after they turn color. If I am going to freeze, I take them out as SOON as they turn color, and plunge into an ice bath, until COLD, DRAIN, place in a ziploc bag and freeze.
