Soyfoods Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon olive oil 1 yellow onion -- minced 8 ounces soft or silken tofu -- drained 2 cups soy milk or milk 1 dash Tabasco sauce 3/4 teaspoon salt 1/8 teaspoon freshly ground black pepper 1 pinch nutmeg 12 ounces elbow macaroni 1 cup grated cheddar or soy cheddar cheese 1/2 cup dry breadcrumbs paprika Besides delivering the health benefits of soy, tofu and soy milk significantly reduce the fat, calories, and cholesterol in this healthful macaroni and cheese. Preheat the oven to 375F. Lightly oil a 3-quart baking dish. Heat the oil in a small skillet over medium heat, add the onion, cover and cook until soft, about 5 to 7 minutes. Set aside. In a blender, combine the tofu, soy milk, Tabasco, salt, pepper, nutmeg, and the reserved onion, and blend until smooth. Cook the macaroni in a large pot of salted boiling water until just tender but still firm, about 8 minutes. When the pasta is cooked, drain it and place in a large bowl. Add the sauce and half of the cheese, and stir until well combined. Spoon into the prepared dish and top with the breadcrumbs and the remaining cheese, and sprinkle with paprika. Cover and bake for 20 minutes. Uncover and bake 10 minutes longer to lightly brown the top.
