Guest guest Posted March 28, 2002 Report Share Posted March 28, 2002 * Exported from MasterCook * Lentil and Sultana Salad Recipe By :Irish Sutton and Shelby Sewell Serving Size : 4 Preparation Time :0:00 Categories : Wraps Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup brown lentils -- washed, picked through 1 1/2 tablespoons fresh lemon juice 1 1/2 tablespoons olive oil 3/4 cup cooked rice -- or double 1 medium red onion -- finely chopped 1/2 cup sultanas (golden raisins) 4 tablespoons italian parsley -- finely chopped 1/2 teaspoon salt 1/4 teaspoon freshly ground pepper 4 naan bread 1. Bring 2 cups water to a boil and pour over the lentils in a large bowl. Let soak 1 hour, then drain. Transfer the lentils to a large saucepan, add 2 cups of water, and bring to a boil. Lower the heat and simmer, covered, until just tender, about 35 minutes. Drain and set aside. 2. Whisk together the lemon juice and the oil. In a large bowl, combine the lentils, rice, onion, and sultanas, and mix thoroughly. Pour the lemon juice and oil over and mix well. Let stand, covered, in the refrigerator for at least 1 hour. Just before serving, add the parsley, salt, and pepper, and mix well. 3. Warm the naan breads in the oven for a few minutes so they are pliable but not crisp.
