Pickled Garlic, Cheese, and Sun Dried Tomato

1/2 cup plain nonfat yogurt without gelatin

3 ounces lowfat cream cheese or boursin

salt and pepper

3 each 8-inch whole-wheat tortillas

1 cup sun-dried tomatoes packed in oil (about 15 halves) --

drained, thinly sliced

1/4 cup fresh parsley -- coarsely chopped

20 cloves pickled garlic -- sliced in half

 

1. Stir the yogurt, then place it in a fine-mesh strainer over a bowl. Place in

the refrigerator and allow to drain for several hours, until all liquid is

drained.

 

2. Discard the liquid in the bowl. Take the contents of the strainer, " yogurt

cheese, " and mix together with the cream cheese until smooth. Salt and pepper to

taste.

 

3. Lay out the tortillas on a clean, dry work surface and spread them with the

cheese mixture. Sprinkle on the tomatoes, parsley, and garlic. Roll up tight and

refrigerate for several hours, overnight if desired.

 

4. Slice the rolled tortillas into 1/2-inch slices, place on a platter, and

serve.

 

TIP - You can keep yogurt cheese on hand for many uses. Pickled garlic is

available at the supermarket.
