Moroccan Vegetable Couscous Pilaf

1 tablespoon olive oil

1 large onion -- chopped

1 cup sliced fresh mushrooms

1 1/2 cups water

2 medium zucchini

cut into 1/8 X 1/8 X 2-inch size strips

1 tablespoon grated orange peel

1/2 teaspoon cinnamon

6 1/8 ounces NEAR EAST Tomato Lentil Couscous

1/4 cup golden raisins or currants

1/2 cup toasted almonds

Prep Time: 10 minutes, Cook Time: 20 minutes

 

In large saucepan, heat olive oil over medium high heat. Add onion and

mushrooms; cook 2 to 3 minutes, stirring constantly, until onion is

transparent.

 

Add water, zucchini, orange peel, cinnamon and contents of Spice Sack;

bring to a boil. Reduce heat to medium; cook 5 minutes.

 

Stir in couscous and raisins; cover and remove from heat. Let stand 5

minutes. Fluff couscous lightly with a fork. Gently stir in almonds;

cover and let stand 3 minutes.

 

TIP: To toast almonds, heat skillet over medium heat. Add nuts and shake

skillet frequently until nuts are lightly browned.
