Coco-Nut Macaroons

Amount Measure Ingredient -- Preparation Method

1 cup grated sweetened coconut

1 cup sliced or slivered almonds -- finely chopped

1/2 cup brown sugar

1/3 cup matzo meal or potato starch

1/4 cup cocoa powder -- sifted, heaping cup

3 large egg whites

nonstick cooking spray

 

Makes 1 dozen cookies.

 

In a mixing bowl, combine the coconut, almonds, brown sugar, matzo meal or

potato starch, and cocoa powder.

 

In a separate bowl, vigorously whisk the egg whites until a stiff peak

forms. Gently fold the egg whites into the coconut mixture, forming a

ball. Cover and refrigerate for 2 hours.

 

Preheat the oven to 325F. Spray a cookie sheet with nonstick cooking spray

or line it with a sheet of waxed paper. Drop the batter by the tablespoon

onto the baking pan. Bake until the edges of the macaroons are firm, about

15 to 20 minutes. Remove from the oven and let cool to room

temperature. Store in an airtight container until ready to serve. Makes 1

dozen cookies.

 

Per Cookie: 123 calories, 3 g protein, 6 g fat, 14 g carbohydrates; 0 mg

cholesterol, 20 mg sodium, 2 g fiber.
