Guest guest Posted March 27, 2002 Report Share Posted March 27, 2002 * Exported from MasterCook * Chunky Monkey Muffins Recipe By :Andrea Chesman Serving Size : 12 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3/4 cup mashed ripe bananas -- (2 bananas) 2 large egg whites 1/2 cup nonfat buttermilk 3 tablespoons canola oil 1/2 cup firmly packed brown sugar 1 1/2 teaspoons vanilla extract 1 1/2 cups unbleached all-purpose flour 1/2 cup toasted wheat germ 1/4 cup oat bran 2 teaspoons baking powder 1 teaspoon baking soda 1/2 teaspoon salt 1/2 teaspoon ground cinnamon 1 cup mini chocolate chips 1/2 cup well-drained crushed pineapple YIELD: ABOUT 12 MUFFINS These chocolate chip and banana muffins take their inspiration from an ice cream flavor invented by Ben & Jerry's. No muffins disappear more quickly in my house than these, which my son calls " good enough to be cupcakes. " Preheat the oven to 400 degrees. Spray a muffin tin with nonstick cooking spray. In a large bowl, combine the bananas, egg whites, buttermilk, canola oil, sugar, and vanilla, and beat well. In a medium bowl, combine the flour, wheat germ, oat bran, baking powder, baking soda, salt, and cinnamon, and mix well. Add to the banana mixture and stir just enough to blend. Stir in the chocolate chips and pineapple. The batter will be lumpy. Spoon the batter into the muffin cups. Bake for about 20 minutes, until a tester inserted into the center of a muffin comes out clean. Cool the tin on a rack for 5 minutes before removing the muffins. Serve warm or cooled.
