Peanut Butter-Oatmeal Chocolate Chip Cookies

1 can sweetened condensed skim milk -- (14-ounce)

3/4 cup reduced-fat peanut butter

2 large egg whites

1 teaspoon vanilla extract

1 1/2 cups unbleached all-purpose flour

1 1/2 cups uncooked rolled oats -- (not instant)

1 teaspoon baking powder

1/2 teaspoon salt

2 cups semisweet chocolate chips

 

In a large bowl, beat together the condensed milk and peanut butter until

smooth. Beat in the egg whites and vanilla.

 

In a separate large bowl, combine the flour, oats, baking powder, and salt. Mix

well. Add to the peanut butter mixture and beat until well mixed. Stir in the

chocolate chips.

 

Chill in the refrigerator for at least 1 hour. When you are ready to bake,

preheat the oven to 350 degrees. Spray baking sheets with nonstick cooking

spray.

 

Drop a rounded tablespoonful of batter for each cookie and flatten the cookie

with the back of the spoon. Place about 1 inch apart on the baking sheets; the

cookies will not spread during baking, but will bake more slowly if they are

overcrowded. Bake for 18 to 20 minutes, until the cookies are lightly browned.

Cool on wire racks.
