Cooling Cucumber and Mint " Drink "

2 medium Kirby cucumbers -- (10 ounces)

- peeled and very finely chopped

50 small young mint leaves -- very finely chopped

1/2 cup Simple Sugar Syrup -- recipe page 735

10 ice cubes -- (10 to 12)

 

This very refreshing, lightly sweetened dish, eaten at all times of the

day, is hardly a drink though it is full of liquid. In Iran it is served

in bowls and eaten with a spoon on blisteringly hot summer days; it is

remarkably cooking.

 

It is best to have tender mint leaves for this, but if your leaves are

large and coarse, just chop them up very finely. The best cucumber to

use here is the crisp, pickling Kirby. If you cannot get these, use any

other crisp cucumber with small, undeveloped seeds.

 

Serves 2

 

Combine the cucumbers, mint, and sugar syrup in a medium bowl and mix

well. Pour into 2 individual bowls, such as ice-cream dishes. Divide the

ice cubes between the bowls. Stir each to mix. Serve immediately and eat

with spoons.
