I'm not sure where this recipe came from, even though it has somebody's name on

it. It was given to me a few years ago by the mother of one of my daughter's

friends, but I don't know if it's from a book by Susan Schreck-Greer, or if this

is just the name of the person she got it from. This is Rachel's favorite

Passover food. She even asks me to make it when it's not even Passover! Kids -

go figure!

Passover Popovers

Amount Measure Ingredient -- Preparation Method

1 cup water

1/3 cup oil

1 cup matzoh meal

1/2 teaspoon salt

2 tablespoons sugar (see notes)

4 eggs (see notes)

 

Preheat oven to 400 degrees. Bring water and oil to a boil. Pour in matzoh

meal all at once and continue cooking and stirring until the dough no longer

sticks to the side of the pot. Remove from heat.

 

Add unbeaten eggs one at a time, mixing thoroughly after each addition.

 

Lightly grease a muffin tin or use paper liners. Fill about 2/3 full.

 

Bake at 400 degrees for about 15 minutes, then reduce oven temperature to 325

degrees and bake for an additional 25 minutes or until browned.

Serving Ideas : Serve with butter, jam or cream cheese. They are also good just

plain.

 

NOTES : If the eggs are very large, you can get away with using only three. You

can also use an egg substitute.

 

The recipe did not originally call for sugar, but I added it because I like

these better a little sweeter.
