I especially loved it with marshmallow fluff and soy nut butter as a sandwich. 8) JJ * Exported from MasterCook * Brainless Banana Pancakes (6 pts) Recipe By : Serving Size : 2 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup whole wheat flour 2 teaspoons baking powder 1 banana -- mashed 1 1/4 cups soy milk 1 tablespoon sugar sliced fresh fruit -- for garnish In a large bowl, sift the flour and baking powder together. In a small bowl, mash the banana with a fork and add 1/4 cup of the milk, mixing together until there are no lumps. Add the banana, sweetner, and remaining milk to the dry mix and stir together until " just mixed. " Portionout about 3/4 - 1 cup of batter onto a hot nonstick pan or lightly oiled frying pan and cover with a lid. Let sit on a medium heat until the center starts to bubble and become sturdy. Flip pancake over and cook other side until golden brown. Repeat process until all the batter is gone. Garnish with fresh fruit and maple syrup. Source: " How It All Vegan!
