Spinach Parmesan Puffs w/Mustard Sauce

Amount Measure Ingredient -- Preparation Method

Puffs:

2 packages frozen spinach -- 10-ounces each

2 cups herb stuffing mix -- crushed fine

1 cup Parmesan cheese -- grated

1/2 cup butter or margarine -- melted and cooled

4 small green onions -- finely chopped

including tops

3 eggs -- lightly beaten

Mustard Sauce:

1/2 cup dry mustard

1/2 cup white vinegar

1/4 cup sugar

1 egg yolk

 

Mix all ingredients thoroughly. Shape into 1-inch balls. Place on ungreased

cookie sheet leaving 1/2-inch space between each. Bake at 350 degrees for 10 -

15 minutes. Serve warm with mustard sauce.

 

Sauce: Combine the mustard and vinegar. Cover and let stand at room temperature

for 4 hours. Mix sugar and egg yolk in small pan. Add mustard-vinegar mixture

and cook over low heat stirring constantly until slightly thickened. Serve at

room temperature. Makes 70 puffs.
