Guest guest Posted March 24, 2002 Report Share Posted March 24, 2002 * Exported from MasterCook * Cauliflower With Tomatoes Recipe By : The Cooking Cardiologist, by Richard Collins, page 165 Serving Size : 4 Preparation Time :0:00 Categories : Side Dishes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 small yellow onion -- chopped 2 cloves garlic 1/2 teaspoon ground ginger 16 ounces canned tomatoes -- drained and chopped 3/4 teaspoon ground cumin 3/4 teaspoon ground coriander 1/4 teaspoon ground turmeric 1/4 teaspoon black pepper 1/8 teaspoon cayenne pepper 1/2 cup water 4 cups cauliflower flowerets 2 teaspoons lemon juice 2 tablespoons minced parsley Serving Size: 4 In a food processor or blender, process the onion, garlic and tomatoes, for 15 to 20 seconds. Transfer to a heavy large skillet, add the ginger, cumin, coriander, turmeric peppers and water. Bring to a boil. Adjust the heat so that the mixture bubbles gently and simmer, uncovered for 5 minutes. Stir in the cauliflower, cover and continue to simmer until cauliflower is tender, 12 to 15 minutes. Stir in the lemon juice and parsley before serving.
