Artichoke Almond Pilaf

Amount Measure Ingredient -- Preparation Method

6 5/8 ounces NEAR EAST Toasted Almond Pilaf

1 tablespoon olive oil or butter

1 medium onion -- minced

14 ounces artichoke hearts -- drained

and cut into small pieces

1 tablespoon lemon juice -- up to 2

1 teaspoon dried basil

3 tablespoons Parmesan cheese -- grated

 

Prepare Near East rice according to package directions.

 

Meanwhile, in medium skillet heat oil over medium heat, add onion and cook

for 2 to 3 minutes or until tender. Stir in artichoke pieces and cook over

low heat for 4 to 5 minutes longer. Remove from heat. Add lemon juice and

basil.

 

Stir artichoke mixture and Parmesan cheese into prepared rice.

 

4 Servings
