Mash with Olives, Garlic and Dill

Amount Measure Ingredient -- Preparation Method

2 1/4 pounds potatoes -- peeled and cut into chunks

salt and freshly ground black pepper

5 tablespoons extra-virgin olive oil

1 garlic clove -- chopped

4 tablespoons light cream or milk -- plus

2 tablespoons light cream if needed

1/2 ounce fresh dill -- chopped

8 black olives -- pitted and chopped

 

Place the potatoes in a saucepan and pour in enough boiling water to cover them.

Add a little salt and bring back just to the boil. Reduce the heat, cover the

pan, and cook for about 10 minutes, until the potatoes are tender. Drain well.

 

Return the potatoes to the pan and add the olive oil, together with plenty of

freshly ground black pepper. Mash the potatoes until smooth. Beat in the garlic,

cream or milk, dill, and olives. Taste for seasoning and serve at once.

 

[Red skinned potatoes would make an attractive presentation for this dish.]
