Guest guest Posted March 22, 2002 Report Share Posted March 22, 2002 i'm thinking about roasting extra cauliflower and using the leftover in these patties. . .. .. .. * Exported from MasterCook * Cauliflower and Leek Patties Recipe By :Bridget Jones Serving Size : 4 Preparation Time :0:00 Categories : New Import Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons olive oil 2 leeks -- finely chopped 1 garlic clove -- crushed 1 teaspoons dried marjoram 12 ounces cauliflower -- see directions salt and pepper 2 cups fresh white breadcrumbs 1/4 cup chopped parsley 4 green onions -- chopped 1 cup grated Cheddar cheese Include the stalk and any little green leaves with the cauliflower. Finely chopped. Heat the olive oil in a saucepan. Add the leeks, garlic, and marjoram. Stir for 5 minutes, until the leeks are softened slightly, then add the cauliflower and stir well. Cover and cook for 5 minutes. Stir in seasoning, then cook uncovered for a further 5 minutes, stirring occasionally. Turn the vegetables into a bowl and let cool. Mix in the breadcrumbs, parsley, spring onions, and cheese. Taste for seasoning and add more salt and pepper, if required. Cover a baking sheet with plastic wrap, shape the mixture into eight round patties, and place them on the baking sheet as they are ready. Cover loosely with plastic wrap and chill for 1 hour. Preheat the broiler. Place the patties on a flameproof dish, or line the broiler pan with foil and brush it lightly with oil, then place the patties on it. Brush the patties with a little oil and broil for 3-4 minutes or until golden brown on top. Turn the patties, brush with oil, and cook until golden for 3-4 minutes on the second side. Serve at once.
