Spinach Pesto with Pine Nuts

Amount Measure Ingredient -- Preparation Method

8 tablespoons olive oil -- divided

1/2 cup pine nuts

4 garlic cloves -- sliced dime-thin

1 tablespoon balsamic vinegar

1 pinch salt

12 cups fresh spinach

SERVICE:

1/2 cup grated Romano cheese

18 ounces pasta -- cooked and drained

or more pasta

 

In a skillet over medium heat, add half the oil. Add the pine nuts, garlic,

balsamic vinegar and salt to the skillet and saute until pine nuts are lightly

toasted. Remove from heat.

 

In a blender, add the spinach and remaining olive oil. Add the sauteed

ingredients from the skillet. Puree until spinach is well-blended. Add small

amounts of water if spinach becomes jammed in the blades of the blender.

 

Toss with freshly cooked pasta, sprinkle with romano and serve.
