Maple Baked Beans

2 cups dried navy or pea beans -- soaked overnight or use the

quick-soak method

8 cups water

1 large onion -- thinly sliced

3/4 cup pure maple syrup

1/2 cup ketchup

1/2 cup brewed coffee

1 tablespoon prepared mustard

1 teaspoon powdered ginger

Salt and freshly ground black pepper

 

YIELD: 6 SIDE-DISH SERVINGS

 

For that traditional baked bean flavor, I sometimes put a 4-ounce piece of salt

pork the bottom of the baking dish. I score the meat in a few places, but keep

the rind intact. When the beans have finished baking, I discard the salt pork. A

piece of lean smoked turkey can provide the same smoky undertone.

 

Drain the beans. Combine the beans in a large pot with the 8 cups fresh water.

Cover and bring to a boil. Reduce the heat and simmer, partially covered, until

just tender, about 1 hour. Skim off any foam that rises to the top of the pot.

 

Preheat the oven to 300 degrees. Combine the beans, their cooking liquid, and

the onion, maple syrup, ketchup, coffee, mustard, ginger, and saIt and pepper in

a bean pot or baking dish and mix well. Cover and bake for about 3 hours or

until the beans are completely tender. Check occasionally to make sure the beans

remain moist and add more hot water if needed. Serve hot.
