Guest guest Posted March 22, 2002 Report Share Posted March 22, 2002 * Exported from MasterCook * Apple Crunch Recipe By :Andrea Chesman Serving Size : 12 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Fruit Filling: 4 pounds apples -- peeled, cored, and sliced (about 12 cups) 2 tablespoons freshly squeezed lemon juice 1/2 cup firmly packed brown sugar 1 1/2 teaspoons ground cinnamon 1/8 teaspoon nutmeg Topping: 1 cup uncooked millet 1 cup uncooked rolled oats -- (not instant) 3/4 cup brown sugar 1/2 cup cold butter In this variation on the traditional apple crisp, the apple filling is flavored in the traditional way, but the topping of oats and millets is most unusual. The millet makes it very crunchy. Preheat the oven to 350 degrees. Spray a 9 X 13-inch baking dish with nonstick cooking spray. Combine the apples and lemon juice in a large bowl. Add the brown sugar, cinnamon, and nutmeg, and mix well. Spoon into the prepared baking dish, using the back of the spoon to make the surface fairly level. To make the topping, place the millet in a blender and process until well ground. The millet should look like coarsely ground cornmeal. In the bowl that held the apples, combine the millet, oats, and brown sugar. Cut the butter into small bits and rub into the grain mixture until it resembles a coarse meal. Sprinkle the topping over the apples, pressing it down and making sure it reaches the edge of the pan. Bake for about 45 minutes, until the top is browned and the apples are tender when tested with a fork. Serve warm or chilled.
