Guest guest Posted March 22, 2002 Report Share Posted March 22, 2002 It may be Spring, but it feels like the worst of winter here in Michigan, definitely chili/soup/stew weather. * Exported from MasterCook * Almost Mom's Quick Chili Recipe By :Andrea Chesman Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon canola or olive oil 1 onion -- diced 1 green bell pepper -- diced 4 garlic cloves -- minced 2 tablespoons chili powder 1 teaspoon ground cumin 3 cups cooked red kidney beans 1 can crushed tomatoes -- (28-ounce) 1 teaspoon dried oregabo Salt and freshly ground black pepper 1 cup water 1/2 cup dry textured vegetable protein (TVP) YIELD: 4 To 6 SERVINGS I didn't exactly set out to trick people with this recipe. When I made it for the first time with the textured vegetable protein (TVP) I purchased on a whim, I was merely expecting a certain change in the texture of my chili. I never expected that my kids would think the chili had ground meat in it. To me this chili tastes like the Americanized dish my Mom once made-tasty and comforting, great in a taco but not terribly authentic. TVP is available in most natural food stores. Heat the oil in a large, heavy-bottomed saucepan or Dutch oven. Add the onion, bell pepper, garlic, chili powder, and cumin, and saute until the onion is limp, about 5 minutes. Add the beans, tomatoes, oregano, and salt and pepper to taste. Simmer for about 30 minutes. Meanwhile, bring the water to a boil. Combine the TVP with the boiling water and let stand for 5 minutes. Add to the chili. Simmer for another 15 minutes. Serve hot over rice or in a taco shell or tortilla.
