Brussels Sprouts with Sweet Potatoes

Amount Measure Ingredient -- Preparation Method

1 pound sweet potato -- peeled

12 ounces small Brussels sprouts

salt and pepper

2 teaspoons extra virgin olive oil -- (or up to 4 tbs)

1 pinch ground cloves

1 pinch ground mace -- (generous)

1/2 teaspoon dried oregano or marjoram

1 teaspoon sugar

1 large orange -- grated zest and juice

 

1. Cut the sweet potato into chunks about the same size as the Brussels sprouts.

Add the sweet potatoes to a large saucepan of boiling salted water and bring

back just to boiling point, cook for 2 minutes.

 

2. Add the Brussels sprouts to the pan and bring back to a boil. Reduce the

heat, if necessary, so that the water does not boil too fiercely and break up

the sweet potato, then cook for 5 minutes until the sweet potato and sprouts are

tender, but not too soft. Drain in a colander.

 

3. Return the pan to the heat and add the olive oil, herbs and spices, sugar,

and orange zest and juice. whisk over high heat until the mixture boils. Boil

hard, still whisking, for about 30 seconds. Add seasoning, to taste.

 

4. Remove the pan from the heat and return the vegetables to it. carefully turn

them in the orange mixture to coat them evenly, taking care not to break up the

delicate pieces of sweet potato and the sprouts. Serve immediately.
