Sherried Sweet Potatoes

Amount Measure Ingredient -- Preparation Method

8 small to medium-sized sweet potatoes

1 cup brown sugar

2 tablespoons cornstarch

1/2 teaspoon salt

1/2 tablespoon orange peel -- grated

2 cups orange juice

6 tablespoons butter

1/2 cup dry sherry

1/4 cup chopped walnuts

 

Cook potatoes in boiling water until tender. Drain. Peel and cut lengthwise into

1/2-inch thick slices. Arrange in 9 x 13-Inch baking dish. Sprinkle with salt.

In sauce pan, blend orange peel, orange juice, and raisins. Cook and stir over

medium heat until thickened, plus 1 minute more. Add butter, sherry, and

walnuts. Pour over potatoes. Bake at 325F for 30 minutes, basting frequently.

Serves 8.
