Guest guest Posted March 21, 2002 Report Share Posted March 21, 2002 xpost veg, lu, mc-rec * Exported from MasterCook * Sherried Sweet Potatoes Recipe By :Slice of Santa Barbara - Junior League of Santa Barbara Serving Size : 8 Preparation Time :0:00 Categories : Potatoes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 small to medium-sized sweet potatoes 1 cup brown sugar 2 tablespoons cornstarch 1/2 teaspoon salt 1/2 tablespoon orange peel -- grated 2 cups orange juice 6 tablespoons butter 1/2 cup dry sherry 1/4 cup chopped walnuts Cook potatoes in boiling water until tender. Drain. Peel and cut lengthwise into 1/2-inch thick slices. Arrange in 9 x 13-Inch baking dish. Sprinkle with salt. In sauce pan, blend orange peel, orange juice, and raisins. Cook and stir over medium heat until thickened, plus 1 minute more. Add butter, sherry, and walnuts. Pour over potatoes. Bake at 325F for 30 minutes, basting frequently. Serves 8.
