Guest guest Posted March 21, 2002 Report Share Posted March 21, 2002 xpost veg, lu, mc-rec * Exported from MasterCook * Artichokes Aurora Recipe By :Slice of Santa Barbara - Junior League of Santa Barbara Serving Size : 2 Preparation Time :0:00 Categories : Artichokes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons olive oil 1/2 pound spinach -- washed and trimmed 1/4 pound mushrooms -- sliced 1/4 cup onion -- chopped 1 small clove garlic -- minced 1/4 cup parmesan cheese -- grated 1/2 teaspoon thyme 1/4 teaspoon salt pepper to taste 1/3 cup slivered almonds 1 lemon or lime -- sliced 2 small artichokes Boil artichokes in lots of water for 30-40 minutes. Drain and cool enough to handle. Heat oil in skillet, saute spinach several minutes. Add mushrooms, onion, and garlic. Cook over high heat, stirring often, until no liquid appears in bottom of skillet. Remove from heat. Add Parmesan cheese, thyme, salt, and pepper. Mix well. Stir in almonds. Cut tops off artichokes. Cut tips off outer leaves. Peel off bottom leaves. Open artichoke leaves slightly and remove center leaves and spiky leaves next to hear. Place lemon/lime slices in bottom of cavity of each artichoke. Fill cavity with spinach mixture. Place artichokes in deep baking dish. Pour 2 cups of water around them. Cover and bake in 375F oven for 30-40 minutes. Serve hot with vinaigrette. Serves 2.
