Guest guest Posted March 21, 2002 Report Share Posted March 21, 2002 * Exported from MasterCook * Basic Almond Milk Recipe By : Healthful Cooking, Mary Carroll, StarTrib, 2/02 Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup blanched almonds 2 teaspoons honey -- optional 1/2 teaspoon vanilla 4 cups cold water -- divided Makes 1 quart. Note: Doane recommends sprouting the almonds overnight for best flavor and digestibility. Place almonds in blender and grind into a powder. Add honey, vanilla and enough water to just cover ground nuts and puree until mixture is consistency of thick cream. Add remaining water and stir well (don't blend). Strain through fine sieve. Cover and refrigerate up to 2 days. From " Almond Essence, " by Janet Doane.
