Chow Mein with Snow Peas

6 large dried shiitake mushrooms

12 ounces dried Chinese egg noodles -- (chow mein noodle)

2 tablespoons safflower oil

2 teaspoons cornstarch

6 tablespoons dry sherry

2 tablespoons light soy sauce

2 teaspoons sesame oil

2 tablespoons chopped fresh ginger

2 garlic cloves -- crushed

8 ounces snow peas -- sliced on the diagonal

8 green onions -- finely chopped

3 tablespoons chopped fresh cilantro

 

1. Place the shiitake mushrooms in a small bowl and pour in just enough boiling

water to cover them. Let soak for 10 minutes, pressing the mushrooms into the

water frequently so that they rehydrate. Drain and slice the mushrooms,

reserving the soaking water and discarding any tough stems.

 

2. Place the dried egg noodles in a large bowl, breaking the sheets in half so

that they fit easily, then pour in plenty of boiling water to cover. Cover and

let soak for about 10 minutes, until tender. Blend the cornstarch to a smooth

paste with the sherry, soy sauce, and sesame oil. Prepare a colander or sieve

for draining the noodles before beginning to stir-fry the vegetables.

 

3. Heat the oil in a wok or large frying pan. Add the ginger and stir-fry for 30

seconds, then add the garlic and stir-fry for a further 30 seconds. Add the

mushrooms and cook briefly, then add the snow peas and green onions. Stir-fry

for 1 minute. Pour in the cornstarch mixture and bring to a boil, stirring until

thickened.

 

4. Quickly drain the noodles and add them to the vegetables. Toss all the

ingredients together so that they are thoroughly combined. Taste for seasoning

and add more soy sauce, to taste if necessary, then sprinkle the chopped

cilantro over the chow mein and serve at once.
