Minestrone with Greens

1/2 cup dried porcini mushrooms

2 cups boiling water

1 tablespoon extra-virgin olive oil

1 onion -- sliced

4 garlic cloves -- minced

1 carrot -- diced

1 small zucchini -- diced

1/2 cup chopped fresh parsley

1/4 cup chopped fresh basil

6 cups water

1 cup small soup pasta (such as rings, ditalini,

alphabets, or bowties)

4 cups chopped Swiss chard or spinach -- packed

1 cup choppe fresh arugula -- optional

1 1/2 cups cooked cannellini (white kidney) beabs

Salt and freshly ground black pepper

Freshly grated Parmesan cheese

 

YIELD: 6 TO 8 SERVINGS

 

Soak the mushrooms in the boiling water until soft, about 10 minutes.

 

Meanwhile, heat the olive oil in a large soup pot over medium heat. Add the

onion and garlic and saute for 1 minute. Add the carrot and zucchini and saute

for another minute. Then add the parsley, basil, remaining 6 cups water, and the

mushrooms with their soaking liquid, taking care to avoid any grit that may have

sunk to the bottom of the liquid. Bring to a boil, then reduce the heat and

simmer for at least 20 minutes. Return the soup to boiling. Add the pasta and

boil gently until the pasta is cooked through, about 5 minutes. Add the greens

and cannellini. Simmer for 5 minutes more. Season with salt and pepper to taste.

 

Serve with a sprinkling of Parmesan on top of each soup bowl and pass additional

cheese at the table. The soup will thicken on standing. Thin with additional

broth or water if needed.
