I like to have a package on hand for quick salads like this one. In a large salad bowl, combine the rice, broccoli slaw, and scallions and toss to mix. In a separate bowl, whisk together the olive oil, lemon juice, mirin, and lemon zest. Pour over the rice mixture and toss well. Season with salt and pepper to taste and set aside for about 15 minutes before serving to allow the flavors to blend.
