Fried Rice With Green Soybeans And Mushrooms

2 tablespoons peanut oil

8 ounces fresh mushrooms -- sliced

1/2 pound fresh or frozen green soybean kernels

1/4 cup soy sauce

2 tablespoons vegetable stock or water -- up to 3

1 teaspoon sugar

4 cups cold cooked rice

1/2 cup cold cooked wild rice

6 green onions -- sliced

1 teaspoon dark sesame oil

 

Makes 6 servings. Vegan

 

Here, I've used the old bean - and given a nod to its Asian roots.

 

1. Pour peanut oil into a hot wok or large skillet, and swirl to coat

pan. Add mushrooms and stir-fry about 3 minutes, until mushrooms are limp

and most liquid has boiled away. Add beans and stir-fry another 2 minutes.

 

2. Push mixture to outsides of wok, creating a well in the

center. Quickly add soy sauce, stock, arid sugar, stirring to dissolve

sugar. Add rices and stir-fry quickly until heated through, tossing to

coat evenly with sauce mixture. Add onions and drizzle with sesame

oil. Stir-fry 1 or 2 minutes to mix well,

 

PER SERVING: 230 CAL (27% from fat), 8 g PROT, 7 g FAT, 34 g CARB, 449 mg

SOD, 0 mg CHOL, 2 g FIBER.
