Quick Hominy-Pinto Bean Soup

1 tablespoon extra-virgin olive oil

1 onion -- finely chopped

1 green bell pepper -- finely chopped

2 jalapeno peppers -- finely chopped (seeded, if desired)

4 garlic cloves -- minced

1 teaspoon chili powder

1 can peeled tomatoes -- (28-ounce)

4 cups high-quality vegetable broth

1 teaspoon dried oregano

1 can hominy -- (15-ounce) rinsed and drained

1 1/2 cups cooked pinto beans

Salt and freshly ground black pepper

 

YIELD: 6 To 8 SERVINGS

 

This soup is quick to make because it requires already cooked-or canned-hominy

and pinto beans. However, the flavor much improves if it is made a few hours or

a day in advance.

 

In a large pot, heat the olive oil over medium heat. Add the onion, green

pepper, jalapenos, garlic, and chili powder. Saute until the onion is limp,

about 4 minutes. Add the tomatoes, broth, and oregano. Bring to a boil. Then

reduce the heat and simmer for about 30 minutes. Add the hominy, pinto beans,

and salt and pepper to taste. Simmer for another 30 minutes. Serve hot.
