I tried sending this the other day and it never went through - during the whole

Groups cleaning or whatever, so here it is.

 

I made this the other night and it was delicious. We loved it, both of us. Next

time I might put a few other types of chinese veggies in with the broccoli.

Thai-Style Noodles with Broccoli

Amount Measure Ingredient -- Preparation Method

1 pkg rice noodles (flat)

hot water -- to cover

1 lg onion -- quartered

3 cloves garlic -- chopped

1 1.5 inch pc ginger root

1 tbsp vegetable oil

1 1/2 tsp chile powder

2 cups vegetable broth

1 1/2 cups light coconut milk

1/2 16 oz bag frozen broccoli -- thawed & dried

1 6 oz can water chestnuts -- sliced

1/4 tsp salt

 

Place rice noodles in a very large bowl. Cover with hot water (not boiling).

Cover. Let sit for 15 minutes. Make sure the noodles are completely covered. Set

aside.

 

In a food processor, place the onion, garlic, ginger and a pinch of salt. Puree

until you have a paste. You might have to scrape down the sides and a couple of

times.

 

In a wok over high heat, drizzle in the oil. Make sure to coat the whole

surface. Place the onion paste in the wok and cook for about 5 minutes, stirring

constantly. Add the chile powder. Cook for another minute until you smell the

fragrance of the chile powder.

 

Stir in the broth and the coconut milk. Bring to a boil. Add the broccoli and

the water chestnuts. Cook, stirring occasionally, for 8 minutes.

 

Drain the rice noodles well. Divide them among shallow serving bowls. Spoon

vegetable mixture over and serve.

NOTES : For added zing, sprinkle with a hotter chile powder right before
