Wash the leeks carefully under cold running water to remove all the grit and dirt. Put the leeks into a lidded skillet that will comfortably hold them in one layer. Add the water and a healthy pinch of salt. Place the pan over medium-high heat and bring the liquid to a boil. Reduce the heat to medium low and cover the pan. Simmer until the leeks are almost tender, about 8 to 10 minutes. Remove the lid and raise the heat to high, letting the liquid boil rapidly away until it is reduced to about 2 tablespoons. Turn off the fire and add the b utter, swirling the pan until the butter has melted and thickened the juices.
