Braised Leeks

4 medium leeks

1/2 cup water

Salt

2 tablespoons unsalted butter

 

Trim the roots and tough upper outer leaves and upper parts of the inner leaves

of the leeks and partially split the green part lengthwise, leaving the white

part intact. Wash the leeks carefully under cold running water to remove all the

grit and dirt.

 

Put the leeks into a lidded skillet that will comfortably hold them in one

layer. Add the water and a healthy pinch of salt. Place the pan over medium-high

heat and bring the liquid to a boil. Reduce the heat to medium low and cover

the pan. Simmer until the leeks are almost tender, about 8 to 10 minutes.

 

Remove the lid and raise the heat to high, letting the liquid boil rapidly away

until it is reduced to about 2 tablespoons. Turn off the fire and add the b

utter, swirling the pan until the butter has melted and thickened the juices.

Serve at once.
