Ellen C * Exported from MasterCook Mac * Migas (Scrambled Eggs With Tortillas) Recipe By : Great American Vegetarian, by Nava Atlas, page 120 Serving Size : 4 Preparation Time :0:00 Categories : Breakfast Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 corn tortillas cut into 1-inch squares 1 tablespoon canola or olive oil 1 small onion -- minced 1 clove garlic -- minced 1 small green bell pepper -- diced 2 medium ripe tomatoes -- diced 1 teaspoon ground cumin Salt and freshly ground black pepper 6 large eggs -- well beaten 2 tablespoons low-fat milk 4 to 6 servings Migas literally means " crumbs " in Spanish. This quick; tasty Southwestern standard was developed as a way to use bits of stale leftover tortillas. Heat a large skillet. Toast the tortilla pieces over medium-high heat, stirring often, until they are dry and crisp. Transfer them to a plate. Heat the oil in the same skillet. Add the onion and garlic and saute over medium-low heat until the onion is translucent. Add the bell pepper and continue to saute until the onion is golden. Add the tomatoes and saute just until they have softened a bit. Stir in the tortilla pieces, add the cumin and some salt and pepper to taste. Turn the heat up so that the skillet becomes very hot. Beat the eggs with the milk and pour into the skillet. Scramble until the eggs are set. Serve at once.
