Mexican Corn and Bean Salad

Amount Measure Ingredient -- Preparation Method

SALAD:

15 ounce canned corn -- rinsed and drained

15 ounce canned kidney beans -- rinsed and drained

1 cup cubed nonfat Cheddar cheese

or soy cheese

1/4 cup chopped onion

1 cup chopped celery

1 red or green bell pepper -- diced

DRESSING:

1 Tablespoon olive oil

2 Tablespoons lemon juice

1 teaspoon cumin

1/2 cup Picante sauce (mild)

1 garlic clove -- pressed

TORTILLA HATS:

6 flour tortillas

2 tablespoons olive oil -- or as needed

 

Salad: Combine all ingredients together.

 

Dressing: In a small bowl, mix all dressing ingredients together and add to the

salad mixture. Blend and serve chilled.

 

Tortilla hat: Brush 6 flour tortillas with a little olive oil, using a pastry

brush. Place 6 custard cups upside down on a baking sheet and lay the tortillas

over the cups, making loose folds. Bake at 400F until edges are browned, about

10 minutes.

 

VARIATION - Bake garlic for a milder flavor: bake in aluminum foil for 15

minutes; mix softened garlic in with the Picante sauce.

 

[Olive oil mister might decrease the amount of oil needed to bake/shape the

hats.]

NOTES : This recipe works well for a box lunch or picnic; it holds up well

outdoors without refrigeration and you can double the recipe inexpensively Serve

attractively at home in a tortilla hat (see directions to make below).
