Lentil Noodle Soup

Amount Measure Ingredient -- Preparation Method

1 teaspoon olive oil

1 onion -- diced

2 garlic cloves -- minced

1 cup dry lentils

2 quarts water

2 carrots -- sliced

2 nonfat vegetable stock cubes

2/3 cup dry noodles (elbows -- corkscrews)

1 cup chopped kale or watercress

parsley optional garnish

 

In a skillet, saute onion and garlic in the oil for 2 minutes. Add lentils,

water, carrots, and bouillon and cook approximately 40 to 50 minutes. Add

noodles and boil another 10 minutes. Add kale and cook a few minutes more.

 

Garnish with fresh parsley, if desired.
