Andrea's Pumpkin Soup

Amount Measure Ingredient -- Preparation Method

8 cups water

6 cups cooked mashed pumpkin

2 celery stalks -- sliced

3 carrots -- sliced

1 onion -- chopped

1 Tablespoon curry powder

1/2 teaspoon ground ginger

1 teaspoon ground allspice

1/2 teaspoon dill (optional)

1 teaspoon salt

pepper -- to taste

 

In a large soup pot, combine all ingredients and cook until soft, about 20

minutes. Puree in a blender until smooth. Return to heat and adjust seasonings

to taste.
