Guest guest Posted March 15, 2002 Report Share Posted March 15, 2002 * Exported from MasterCook * Vegetable Barley Soup Recipe By :Jeanne Tiberio Serving Size : 4 Preparation Time :0:00 Categories : Jeanne_Tiberio New Import Vegetarian VegHomestyle Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 Tablespoon vegetable oil 1 onion -- chopped 1/2 cup sliced fresh mushrooms 1 quart water 1/2 cup barley 2 large potatoes -- peeled and chopped 2 carrots -- peeled and sliced 1 teaspoon dried basil 1/2 teaspoon dried rosemary 1/2 teaspoon salt 1 cup skim milk In a large soup pot, saute onion and mushrooms. Add remaining ingredients except milk and cook 25 to 30 minutes or until potatoes are tender. Add milk and heat thoroughly without boiling. Season with pepper, if desired.
