Vegetable Barley Soup

Amount Measure Ingredient -- Preparation Method

1 Tablespoon vegetable oil

1 onion -- chopped

1/2 cup sliced fresh mushrooms

1 quart water

1/2 cup barley

2 large potatoes -- peeled and chopped

2 carrots -- peeled and sliced

1 teaspoon dried basil

1/2 teaspoon dried rosemary

1/2 teaspoon salt

1 cup skim milk

 

In a large soup pot, saute onion and mushrooms. Add remaining ingredients except

milk and cook 25 to 30 minutes or until potatoes are tender. Add milk and heat

thoroughly without boiling. Season with pepper, if desired.

NOTES : Barley is a grain that can be found in health food stores or on

supermarket shelves with the cereals for cooking. The potatoes can be microwaved

3 to 4 minutes first to reduce cooking time.
