We do something similar with mixed veggies -- frozen from C & W with corn and

peppers and black beans and other stuff... can't recall.

Amount Measure Ingredient -- Preparation Method

1/4 cup cider vinegar

3 Tablespoons sugar

1/4 teaspoon Salt

1/4 teaspoon dry mustard

Dash cumin

1 cup cooked corn kernels

1/4 cup diced onion

1/4 cup diced sweet bell pepper

 

Combine vinegar, sugar, salt, and spices in a saucepan and bring to a boil. Add

vegetables and cook for 4 to 5 minutes. Cool and place in a clean glass jar.

Refrigerate.

 

CORN: Use leftover fresh corn cut from the cob or Niblets -- frozen or canned.
