Peanutty Carrot Loaf

Amount Measure Ingredient -- Preparation Method

1 teaspoon hot sesame oil or olive oil

1 small onion -- chopped

4 raw carrots -- shredded

2 small zucchini -- shredded

1/3 cup dry-roasted unsalted peanuts

3/4 cup bread crumbs

1/4 cup flour

1/4 cup nonfat egg substitute

1 teaspoon baking powder

1 Tablespoon parsley

1/2 teaspoon oregano

1/2 teaspoon salt

Dash pepper

cooking spray

 

Preheat oven to 350F. Spray 8-inch square baking dish or 8x4-inch loaf pan with

cooking spray.

 

In a skillet, saute the onion in the oil for a minute; remove from heat Using a

food processor or cheese grater, shred the carrots and zucchini. Chop peanuts in

food processor or blender. Add all of the ingredients to the sauteed onion in

the skillet and stir to blend evenly.

 

Place in either a prepared 8-inch square baking dish or loaf pan. To make

patties, add bread crumbs if needed, and cook in a prepared skillet

 

Bake at 350F for 25 to 30 minutes, or until the loaf begins to brown on top.
