Veggie Burritos with Black Bean Sauce

Amount Measure Ingredient -- Preparation Method

1 recipe Black Bean Sauce ( Mexican)

VEGGIE FILLING:

1/2 cup defatted low-sodium vegetable broth

1 onion -- chopped

1 cup sliced mushrooms

2 carrots -- shredded or diced

1 cup broccoli -- chopped

1 red pepper -- chopped

1 cup fresh mung bean sprouts

6 fat-free flour tortillas

 

Make the sauce (see separate recipe) and set aside.

 

To make the filling: In a saucepan, simmer all vegetables in the broth for about

5 minutes, adding more broth if necessary.

 

To assemble: Warm tortillas by either placing them in the oven (covered with

foil) or placing them on a cooling rack over the skillet as the vegetables are

simmering. Add about 3 tablespoons of filling to each. Roll and place, edges

down, on a plate. Spoon warm sauce over each tortilla and serve.
