To make the filling: In a saucepan, simmer all vegetables in the broth for about 5 minutes, adding more broth if necessary. To assemble: Warm tortillas by either placing them in the oven (covered with foil) or placing them on a cooling rack over the skillet as the vegetables are simmering. Add about 3 tablespoons of filling to each. Roll and place, edges down, on a plate. Spoon warm sauce over each tortilla and serve.
