Subgum Chow Mein

Amount Measure Ingredient -- Preparation Method

2 teaspoons olive or sesame oil

4 celery stalks (4-5) -- sliced

2 medium onions -- sliced

2/3 cup vegetable broth

or nonfat bouillon with water

3 cups fresh bean sprouts

6 fresh mushrooms (6-7) -- chopped

3 Tablespoons light soy sauce

1 Tablespoon cornstarch

2 teaspoons sugar

1/3 cup water

1/4 cup unsalted dry roasted peanuts

 

In a skillet, saute celery and onion in the oil. Add broth, bean sprouts,

mushrooms, and soy sauce. Cook until vegetables are done. Combine cornstarch,

sugar and water. Add to the vegetable mixture and heat until thickened. Add

peanuts. Serve over rice.
