Guest guest Posted March 14, 2002 Report Share Posted March 14, 2002 * Exported from MasterCook * Garlicky Sweet Potatoes Recipe By :Andrea Chesman Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 sweet potatoes -- peeld, and cut into 1/2-inch dice 2 tablespoons peanut oil Salt and freshly ground black pepper 3 tablespoons butter -- melted 4 garlic cloves -- minced Why add sweet flavors to an already sweet vegetable? Garlic is the perfect foil for this delicious, nutritious vegetable superstar. Preheat the oven to 500F. Lightly oil a large shallow roasting or half sheet pan. In a large bowl, combine the sweet potatoes, oil, and salt and pepper to taste. Toss to coat. Arrange in a single layer in the pan. Do not crowd the potatoes, or the final texture will be too soft and mushy. Place the pan on a rack in the lower third of the oven. Roast for 15 minutes, until the potatoes are tender, stirring or shaking the pan once for even cooking. Combine the butter and garlic in a small bowl. Pour over the potatoes and toss to coat. Roast for another 10 to 15 minutes, until the potatoes are slightly crisp. Do not overcook, or the garlic will become bitter. Serve hot.
