Serve Sauteed Bananas on frozen plain or vanilla yogurt or ice cream, or with whipped cream, sweetened sour cream, or yogurt. If your bananas have ripened beyond firmness, you may prefer to use them in Creamy Banana Ice (see page 308). Peel and slice the bananas into 1/2-inch-thick rounds. In a heavy saucepan or skillet on medium heat, melt the butter until it just begins to bubble. Stir in the cinnamon until it is evenly distributed in the foaming butter. Add the orange juice concentrate and the liqueur, if desired, stirring constantly. When the concentrate is melted and the sauce is smooth, add the banana slices, stirring gently but quickly to coat them evenly, about 30 seconds. Serve immediately on frozen yogurt gurt or ice cream.
