Simple Rice and Lentil Pilaf

Amount Measure Ingredient -- Preparation Method

1 tablespoon olive oil

3 cloves garlic -- minced

1 1/2 cups long-grain brown rice -- uncooked

1/4 cup dried lentils

3 cups water

1/4 teaspoon salt

1/4 cup fresh parsley -- minced

 

Makes 6 servings.

 

Heat olive oil in a large saucepan over medium heat. Add garlic and

saute a minute or two, then add the rice and lentils and saute 5

minutes. Rice will begin to brown a little and will crackle. Pour in the

water and stir in the salt and parsley. Increase heat to high and bring

to a good boil. Immediately cover, reduce heat to very low, and simmer,

covered, 45 minutes. Without disturbing the lid, allow to sit 10

minutes. Fluff with a fork and serve.
