Guest guest Posted March 11, 2002 Report Share Posted March 11, 2002 * Exported from MasterCook Mac * Curried Tofu Scramble Recipe By : Mindy Toomay & Susan Geiskopf-Hadler Serving Size : 8 Preparation Time :0:00 Categories : vegetarian brunch entrees Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound firm tofu 1 cup water 2 tablespoons curry powder 2 tablespoons honey 1 teaspoon ground turmeric 1/2 teaspoon salt 2 tablespoons canola oil 1 teaspoon cumin seeds 2 cloves garlic -- minced 1 medium onion -- finely chopped 1/2 cup red bell pepper -- finely chopped 1/2 pound mushrooms -- sliced 1 teaspoon dried oregano Ben Davis Jr. is famous for his scrambled tofu breakfasts. This recipe is a delicious variation on this basic theme. Serves 8. With your hands, crumble tofu into a large, dry skillet. Whisk one cup of water with curry powder, hoeny, turmeric, and salt, then stir this mixture into the skillet. Bring to a simmer over high heat. When bubbling, reduce heat to medium and cook, stirring occasionally, until liquid has evaporated and tofu consistency is as you like it (moist and soft or dry and crumbly). This will take 15 - 20 minutes. Meanwhile, heat canola oil in a skillet over medium heat. Saute cumin seeds, garlic, onion, and bell pepper for about 5 minutes, then stir in mushrooms and oregano and cook 5 minutes longer, until mushrooms have released their liquid and are tender. Combine mushroom mixture with tofu mixture and serve hot. Recommended companion dishes: toast or Potatoes with Paprika and Chilies (page 348), and fresh fruit.
